Whole shoulder butt prepared with the finest certified pork. Extensive ageing and slow drying (50% water loss), over the course of at least 120 days, results in supremely mild, lightly salted, natural flavour and aroma. Available sweet or hot. Serve thinly sliced with fresh figs or cantaloupe

Pork loin. Hand-selected and hand-trimmed with care to leave a thin covering layer of fat. Seasoned with Mediterranean spices and herbs. Slow ageing and drying (45% water loss), over the course of at least 120 days, results in a smooth balanced flavour. Available sweet or hot. Serve as an appetizer or as a main course with fresh lettuce, arugula salad and cherry tomatoes.
